

It’s summertime and you want something nice and light for dinner in the evening, which could also work for lunch the next day if you have leftovers. Now, while ‘summer’ may still be a distant concept here in Netherlands (read ‘wet and rainy’), these light, refreshing lettuce wraps still make a delicious alternative for a meal. It’s like capturing the sun on your plate. Wraps are always easy to make, but sometimes they can be a bit heavy. By using Romaine lettuce for the wrap, you create something lighter to digest! Plus, it’s super healthy, full of vitamins and vegetables and lower in calories! That makes it a win-win!

Ingredients:
– 1 red pepper
– 2 handfuls of broccoli
– 1 package of oriental
– spiced tofu (optional: chicken)
– Hummus
– 1 red onion
– 1 small can of corn kernels, drained
– Radish sprouts
– Romaine lettuce
Preparation:
Chop the pepper and red onion, while you parboil the broccoli. Put some coconut oil in a wok and stir-fry the tofu until cooked through; then add the corn and pepper and stir-fry a bit longer — but not too long, because you want everything nice and crisp! Drain the broccoli, add it to the wok and stir-fry briefly. Add the red onions and radish sprouts at the end. Rinse the Romaine lettuce and tear off 2 large leaves to use as wraps. Fill the lettuce leaves with your delicious stir-fry mixture and spread some hummus on top. Enjoy!
