3 healthy recipes for summer salads
Summer is on its way! That means bye-bye stews and hello salads.In this blog, I share my 3 favourite summer salads with you.
1. Spinach salad with goats’ cheese
I am 100% a lover of goats’ cheese. Goats’ cheese with a little bit of fresh spinach is simply delicious.
Take about 50 – 100g of fresh spinach. Add a couple of cherry tomatoes, some cucumber, pine nuts and goats’ cheese. Do you want to make it even more delicious? Fry some diced bacon and toss it through the salad. Finally, add a couple of drops of sweetness and then you have a delicious and easy salad to enjoy!
2. Salad with chicken and blueberries
Fresh, sweet and full of protein. Great if you exercise a lot and have to eat enough protein! Cut about 100g of chicken into pieces, sprinkle over some chicken seasoning and fry in a little bit of olive oil.
Take about 100 – 200g of iceberg lettuce and add some cherry tomatoes, cucumber and pine nuts. Of course you can choose to add a bit of goats’ cheese to this salad but you could also add mozzarella or feta cheese! Finally, add 1 or 2 handfuls of blueberries and you will have a fresh, yet sweet salad that will fill you up nicely!
3. Salmon salad with boiled egg and avocado
This salad is perfect for the fish lovers among us. I love the combination of salmon with boiled egg, so maybe you can give it a try too!
You can choose between fresh spinach and iceberg lettuce for this salad. I mostly choose 100-200g of iceberg lettuce and add some cherry tomatoes, cucumber and pine nuts. You can choose to use fresh salmon and fry it quickly in a pan, but I am a fan of smoked salmon. Boil an egg for about 5 – 7 minutes and chop it into pieces. Get half an avocado and also chop it into pieces. Add the salmon, egg and avocado to your salad and enjoy! Personally, I never choose to add a dressing to my salad. If I do add a dressing, I make it with a bit of vinegar or balsamic vinegar for example. Normally I add a couple of drops of sweetness or I toss a bit of cottage cheese through my salad. That makes it just a bit fresher!
