I was never too fat but I was chubby and I wasn’t comfortable in my skin. You might say I had no self-confidence at all. That changed when I turned my life around and started living more healthily and exercising 4-5 times a week. Of course that is something I built up over the years. When you do that, you don’t just see a physical change, you also notice your mindset changing. You start feeling more comfortable in your skin and you also become mentally stronger. It’s wonderful to feel that you can do anything!
A quote I personally find very powerful is: Remember that you are still going forward and that making mistakes is normal. Focus on improving yourself. Transcend your fears/ Shatter your limits. Because the only thing getting in the way of your success is yourself, not the opinions of others. – It doesn’t matter how fast you are going or what anyone thinks of you, you’ll get there. You are doing it for yourself, at your own pace. Making mistakes is human and only makes you stronger!
What you will need: 1 courgette, half a red onion, a handful of mushrooms, a handful of cherry tomatoes, a handful of sliced olives, a handful of quinoa (optional), dried Italian herbs, spring onions, a tablespoon of cottage cheese
How to make it: Boil the quinoa until done, drain and set aside (optional). In the meantime, using a julienne peeler, slice the whole courgette into thin strips. Chop the tomato, red onion and mushrooms. Heat some coconut oil in a wok and fry the red onions and mushrooms al dente. Then add the courgette and continue stir-frying for two minutes! Next, add the olives and cherry tomatoes. Sprinkle on the Italian herbs to taste and chop some spring onions above the wok using scissors. Turn off the heat, stir one more time and add the quinoa. Arrange nicely on a plate and put a spoonful of cottage cheese on top plus some extra spring onion for flavour. Serve with Valess Italian vegetarian balls!
